Here at Neals Yard Creamery we make a range of traditionally made yoghurts, goat’s cheeses and crème fraiche in our dairy at Dorstone in the golden valley in Herefordshire. All the cheese; Ragstone, Dorstone, Perroche goat’s milk cheeses and Finn from cow’s milk are unpasteurised and made with traditional rennet, using a completely un-mechanised system of production, with all the curds being ladled by hand. The cow’s milk products are all certified organic.
In order to reduce our carbon foot print, we installed a grid connected 6kw wind turbine four years ago, which provides a good deal of the dairies electrical needs. We also have 12 solar panels to provide us with most of our hot water and heating throughout the year, backed up in the winter by a wood burning stove capable of heating 4000 litres of water.
The large amount of waste water from the dairy is dealt with by a WET system, which was built by Jay Abrahams of Biologic design five years ago and is improving all the time. This is not only an effective, environmentally sound way of dealing with waste water, but also enhances the natural biodiversity of the area by creating a haven for wild life.
